Ingredients
For the Chicken Marinade:
-
2 lbs boneless skinless chicken breasts
-
¼ cup Blackberry Ginger Balsamic
-
2 tablespoons Persian Lime Olive Oil
-
1 teaspoon sea salt
-
½ teaspoon black pepper
-
1 clove garlic, minced
For the Bowl Base:
-
2 cups cooked brown rice
-
1 cup cooked lentils
-
2 cups sweet potatoes, peeled and diced
-
1 cup cherry tomatoes, halved
-
1 cup cooked or roasted beets, diced
-
1 cup strawberries, diced
-
1 kiwi, diced
For Finishing:
-
1–2 tablespoons Persian Lime Olive Oil (for drizzling)
-
1 tablespoon Blackberry Ginger Balsamic (optional finishing drizzle)
-
Sesame seeds
-
Flaky sea salt
Directions
In a bowl, whisk together Blackberry Ginger Balsamic, Persian Lime Olive Oil, garlic, salt, and pepper. Add the chicken and marinate for at least 20 minutes (or up to 4 hours in the refrigerator).
Preheat the oven to 400°F. Toss the diced sweet potatoes with 1 tablespoon Persian Lime Olive Oil and a pinch of salt. Roast for 20–25 minutes, until tender and lightly caramelized.
Grill or pan-sear the chicken over medium heat for 5–7 minutes per side, until the internal temperature reaches 165°F. Let rest for 5 minutes, then slice.
Divide the cooked brown rice among four bowls. Arrange the lentils, roasted sweet potatoes, cherry tomatoes, beets, strawberries, and kiwi around the bowl.
Place the sliced chicken in the center. Drizzle with additional Persian Lime Olive Oil and a light splash of Blackberry Ginger Balsamic. Sprinkle with sesame seeds and flaky sea salt.
Serve immediately while the chicken is warm and the ingredients are fresh and vibrant.
Recipe Note
This bowl is all about balance.
The Blackberry Ginger Balsamic brings gentle sweetness and warmth, while the Persian Lime Olive Oil keeps everything bright and fresh.
If serving for an event, slice the chicken thin and lightly drizzle both products just before serving so guests can taste the oils clearly.
For meal prep, store components separately and drizzle oil and balsamic right before eating for best flavor.
