This Chipotle & Pineapple Shrimp Salad is light, bright, a little smoky, a little sweet, and full of that fresh citrusy snap we love on a warm day.
Juicy cooked shrimp gets tossed with colorful bell peppers, crisp red onion, fresh cilantro, and a simple dressing made with lime juice, Chipotle Olive Oil, and Pineapple Balsamic. It’s quick, flavorful, and absolutely perfect for lunch, dinner, or your next little gathering.

A bright, smoky, sweet-heat shrimp salad tossed with Chipotle Olive Oil, Pineapple Balsamic, fresh lime juice, crisp veggies, and cilantro. Serve chilled over greens, in lettuce cups, or in chilled glasses for a beautiful presentation.
Ingredients

1 lb cooked shrimp, peeled and deveined, tails removed

½ red bell pepper, thinly sliced

½ orange bell pepper, thinly sliced

½ red onion, thinly sliced

1 stalk celery, thinly sliced (optional for crunch)

¼ cup chopped fresh cilantro

2 cups chopped romaine or mixed greens (optional base)

Juice of 2 limes

1 tbsp Chipotle Olive Oil

1 tbsp Pineapple White Balsamic

Salt and black pepper to taste
Directions
Roughly chop the shrimp and add to a large bowl.
Add bell peppers, red onion, celery (if using), and cilantro.
In a small bowl, whisk together lime juice, Chipotle Olive Oil, Pineapple Balsamic, salt, and pepper.
Pour the dressing over the shrimp mixture and toss well to coat.
Chill for at least 30 minutes to let flavors develop.
Serve over greens, in lettuce cups, or in chilled glasses for a beautiful presentation.
