A Shrimp Salad with Sweet Heat and Citrus Snap

Now this is what we call summer in a bowl.

This Chipotle & Pineapple Shrimp Salad is light, bright, a little smoky, a little sweet, and full of that fresh citrusy snap we love on a warm day.

Juicy cooked shrimp gets tossed with colorful bell peppers, crisp red onion, fresh cilantro, and a simple dressing made with lime juice, Chipotle Olive Oil, and Pineapple Balsamic. It’s quick, flavorful, and absolutely perfect for lunch, dinner, or your next little gathering. 

However you serve it, this shrimp salad brings that sweet heat in the best way. Serve it over greens, tuck it into lettuce cups, or spoon it into chilled glasses for a pretty appetizer-style presentation.
