
Zesty Lemon & Oregano Glazed Salmon with Garlic Asparagus

Ingredients:
For the Salmon:
- 4 salmon fillets
- 2 tbsp Lemon Olive Oil
- 2 tbsp Oregano White Balsamic
- 2 tsp Dijon mustard
- 2 cloves garlic, minced
- Salt & fresh ground pepper
- Fresh dill and lemon wedges, for garnish
For the Asparagus:
- 1 bunch asparagus, trimmed
- 1 tbsp Lemon Olive Oil
- 1 garlic clove, minced
- Salt and pepper, to taste
- Grated Parmesan (optional)
Instructions:
- Preheat oven to 400ºF and line a baking sheet with parchment paper.
- In a small bowl, whisk together the Lemon Olive Oil, Oregano Balsamic, Dijon mustard, minced garlic, salt, and pepper.
- Place the salmon fillets on the baking sheet. Spoon the glaze over the top of each fillet.
- In a separate bowl, toss the asparagus with Lemon Olive Oil, garlic, salt, and pepper. Arrange beside the salmon on the same baking sheet.
- Roast for 12–15 minutes, or until salmon flakes easily with a fork and asparagus is tender.
- Sprinkle asparagus with Parmesan during the last few minutes of roasting, if desired.
- Garnish with fresh dill and lemon wedges. Serve warm and enjoy!
