Ingredients

⅓ cup apricot preserves

¼ cup Baklouti Premium Olive Oil

1 tbsp Dijon mustard

¼ tsp salt

1 tbsp Blenheim Apricot White Balsamic Vinegar

4 boneless, skinless chicken breasts (about 4 oz each)
Directions
Preheat the broiler and position the rack about 3–4 inches from the heat.
In a small saucepan, combine the apricot preserves, Baklouti Premium Olive Oil, Dijon mustard, salt, pepper, and Blenheim Apricot White Balsamic Vinegar. Cook over medium heat, stirring, until heated through and smooth.
Place the chicken breasts in a 15×10×1-inch baking pan coated with cooking spray. Spoon the sauce evenly over the chicken, coating well.
Broil for 6–8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
Remove from the oven and serve hot with any remaining pan sauce spooned over the top.
