This oven-baked frittata is packed with mushrooms, melted cheese, and scallions for a no-fuss, flavorful brunch or dinner. Made in a skillet and finished in the oven for a crisp, golden top.
Ingredients
- 8 large eggs
- ΒΌ cup milk or cream
- 1 cup shredded mozzarella (or cheese of choice)
- 1 cup mushrooms, sliced
- 2β3 scallions, chopped (plus extra for garnish)

2 Tbsp extra virgin olive oil
- Salt and pepper to taste
- Optional: ΒΌ tsp garlic powder or 1 clove fresh garlic, minced
Directions
Preheat oven to 375Β°F
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic (if using). Set aside.
- In an oven-safe skillet, heat EVOO over medium heat. Add mushrooms and cook for 4β5 minutes, until softened.
- Add most of the scallions to the pan, saving some for garnish.
- Pour the egg mixture over the mushrooms and scallions in the skillet.
- Sprinkle cheese evenly on top. Let cook on the stovetop for 2β3 minutes until edges begin to set.
- Transfer skillet to the oven and bake for 10β12 minutes, or until the center is just set and top is golden.
- Let rest 2 minutes, garnish with extra scallions, slice, and serve.
