In a 10–12-inch skillet, sauté onions and peppers in Garlic Premium Extra Virgin Olive Oil. Whisk about 6 eggs and a little bit of milk or cream (optional) with small chunks of cheese, and season with salt, pepper, and any other spices you like. If you have leftovers in the fridge like pasta or potatoes, bacon, spinach, vegetables, etc., toss in the skillet with the onions and peppers and cover with the egg mixture. Cover the skillet and turn down the temperature so the mixture cooks without burning. When it is firm enough, flip it and cook until done. Frittatas are a delicious way to use up what you already have in the house!
