Parsley and Lemon Pesto


  • 1/4 cup Extra Virgin Olive Oil
  • 2 Tbsp Sicilian Lemon Balsamic Vinegar
  • 2 bunches of flat-leaf parsley
  • 6 garlic cloves
  • 1/4 cup mint leaves
  • 1 Tbsp lemon zest


  1. Place all ingredients in a food processor or blender in the order they are listed until smooth.
  2. Serve with fresh pasta, flat bread pizza, or on a charcuterie board. Delicious, simple, and refreshing!
