Garlic Olive Oil Meatballs & Mashed Potatoes

Ingredients

    • 1 lb ground beef (or a mix of beef and pork)
    • 1/4 cup breadcrumbs
    • 1 egg
    • 2 cloves garlic, minced
    • 2 tbsp finely chopped onion
    • 1 tbsp chopped parsley
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 tbsp ingredient

    • 2 lbs Yukon Gold potatoes, peeled and cut into chunks
    • 1/2 cup milk or cream
    • 2 tbsp unsalted butter
    • 2 tbsp Garlic Premium Olive Oil

    • Salt and pepper to taste
    • Chopped chives for garnish

    Directions

    1. In a large bowl, combine ground meat, breadcrumbs, egg, garlic, onion, parsley, salt, and pepper.
    2. Mix until just combined and form into 12 meatballs.
    3. Heat 1 tbsp Garlic Olive Oil in a skillet over medium heat.
    4. Sear meatballs for 2–3 minutes on each side until browned and cooked through (internal temp 160°F). Set aside.
    5. Boil potatoes in salted water until fork-tender, about 15–18 minutes.
    6. Drain and mash with milk, butter, and Garlic Olive Oil until smooth and creamy.
    7. Season with salt and pepper to taste.
    8. Plate mashed potatoes and top with meatballs.
    9. Drizzle with a little more Garlic Olive Oil.
    10. Garnish with chopped chives and serve warm.
