Ingredients:
- 4 mackerel fillets
- 3 tablespoons Extra Virgin Olive Oil (EVOO)
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- Salt and pepper to taste
- Lemon wedges for serving
- Sliced red onions and pickled onions for garnish
- Fresh parsley for garnish
Instructions:
- In a small bowl, mix together the EVOO, lemon juice, minced garlic, chopped parsley, chopped dill, salt, and pepper.
- Place the mackerel fillets in a shallow dish and pour the marinade over the fish. Ensure the fillets are evenly coated. Cover and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Remove the mackerel fillets from the marinade and place them on the grill, skin side down. Grill for 5-7 minutes on each side, or until the fish is cooked through and has a nice char.
- Transfer the grilled mackerel to a serving platter. Garnish with lemon wedges, sliced red onions, pickled onions, and fresh parsley.
