Lavender Shortbread Cookies with Herbes de Provence Olive Oil
Share
There’s something so lovely about a simple shortbread cookie.
It doesn’t need frosting or filling or anything fancy. When it’s done well, it’s buttery, tender, and just sweet enough—exactly the kind of little treat that feels special with a cup of tea.
These Lavender Shortbread Cookies are a soft, delicate twist on a classic, made with Herbes de Provence Olive Oil for a subtle herbal note that makes them feel just a little more interesting without losing that simple, comforting shortbread charm.
The olive oil gives the cookies a tender texture and a gentle savory depth that works beautifully with the floral lavender. It’s not overpowering at all. Instead, it adds that little something that makes you stop after the first bite and think, “Oh, that’s lovely.”
I love recipes like this because they feel elegant, but they’re still very easy to make. They’re perfect for spring gatherings, afternoon tea, Easter dessert trays, or simply keeping in the kitchen for those moments when you want something small and sweet.
And visually, they’re just so pretty. A little lavender folded into the dough, a pale golden edge, and that delicate crumbly texture that makes shortbread such a favorite.
If you’re looking for a cookie that feels light, a little unexpected, and beautifully simple, this is such a nice one to have on hand.
Quietly special, which is often the very best kind of recipe.
