1 lb fresh strawberries (completely dry)

8 oz high-quality dark chocolate (60–70%)

1 tsp Premium Extra Virgin Olive Oil

2 oz white chocolate (for drizzle, optional)

Optional: ½ tsp Dark Balsamic (Traditional or Strawberry Balsamic)

Optional toppings: sea salt, crushed pistachios, shaved dark chocolate
Directions
Wash the strawberries gently and dry them completely. Any moisture will prevent the chocolate from sticking properly.
Line a baking sheet with parchment paper and set aside.
Place the dark chocolate in a microwave-safe bowl. Heat in 20-second intervals, stirring between each interval, until fully melted and smooth.
Stir in 1 teaspoon of premium extra virgin olive oil until the chocolate becomes glossy and silky.
Hold each strawberry by the stem and dip it into the melted chocolate, turning slightly to coat evenly. Allow excess chocolate to drip back into the bowl.
Place the dipped strawberries on the prepared parchment-lined baking sheet.
If using white chocolate, melt it separately using the same method. Drizzle over the dipped strawberries using a spoon or piping bag.
Optional: Lightly drizzle with aged balsamic or sprinkle with flaky sea salt before the chocolate sets.
Refrigerate for 20–30 minutes, or until the chocolate is fully set.
Serve the same day for best texture and flavor. Store in the refrigerator for up to 24 hours.
