Ingredients
- 2½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup sugar
- 3 large eggs
- ¾ cup milk
- ½ cup mild Extra Virgin Olive Oil
- Zest of 1 grapefruit or orange
- 1 teaspoon vanilla extract
- For the Grapefruit Balsamic Glaze

⅓ cup Grapefruit Balsamic Vinegar
- ¼ cup sugar
- Optional: 1 tablespoon fresh citrus juice
Directions
- Preheat oven to 350°F. Generously grease a bundt pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, whisk sugar and eggs until light and smooth.
- Add milk, olive oil, citrus zest, and vanilla. Mix well.
- Gradually stir in dry ingredients until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 45–50 minutes, until a toothpick comes out clean.
- While the cake bakes, combine Grapefruit Balsamic and sugar in a small saucepan.
- Simmer gently for 5–7 minutes until slightly thickened. Remove from heat.
- Let cake cool for 10 minutes, then invert onto a plate.
- Spoon warm grapefruit balsamic glaze over the cake, letting it soak in before serving.
