Ingredients

  • 1 pint cherry tomatoes, halved
  • 3 tablespoons Garlic Premium Olive Oil, divided
  • 2 tablespoons Traditional Dark Balsamic Vinegar, plus more for finishing
  • 1 teaspoon sea salt, divided
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon dried Italian seasoning
  • 1 French baguette or small artisan loaf, cut into 12 slices
  • ¼ cup fresh basil leaves, thinly sliced
  • ¼ cup freshly grated Parmesan cheese, optional
  • Fresh basil leaves, for garnish

Directions

  1. Preheat the oven to 400°F.
  2. Place the halved cherry tomatoes on a parchment-lined baking sheet.
  3. Drizzle the tomatoes with 2 tablespoons of Garlic Olive Oil and 1 tablespoon of Traditional Dark Balsamic.
  4. Season with ½ teaspoon sea salt, black pepper, and Italian seasoning. Toss gently to coat.
  5. Roast for 15–20 minutes, or until the tomatoes are softened, juicy, and lightly caramelized.
  6. Arrange the bread slices on a separate baking sheet.
  7. Brush each slice lightly with the remaining Garlic Olive Oil and sprinkle with the remaining sea salt.
  8. Toast for 5–7 minutes, turning once, until the bread is crisp and golden around the edges.
  9. Spoon the warm roasted tomatoes and their juices over each toasted bread slice.
  10. Top with sliced fresh basil and Parmesan, if using.
  11. Finish with the remaining Traditional Dark Balsamic and an additional drizzle to taste.
  12. Garnish with fresh basil and serve immediately.
