This summery twist on traditional caprese pairs juicy peaches with creamy fresh mozzarella, fragrant basil and our Basil Olive Oil. A finishing drizzle of Peach White Balsamic brings everything together with a bright, fruity flavor that complements the peaches beautifully.

A Fresh Twist on Classic Caprese

Traditional caprese is known for its simple combination of tomatoes, mozzarella and basil. In this flatbread recipe, ripe peaches take the place of the tomatoes, adding a naturally sweet and juicy layer that’s perfect for summer.

Brushing the flatbread with Basil Olive Oil before baking gives the crust a delicious herbaceous flavor and helps the edges become beautifully golden and crisp. Ingredients

  • 2 naan-style flatbreads or prepared artisan flatbread crusts
  • 2 tablespoons Basil Olive Oil, divided
  • 8 ounces fresh mozzarella, sliced or torn into pieces
  • 2 ripe peaches, pitted and thinly sliced
  • ¼ teaspoon sea salt, or to taste
  • Freshly ground black pepper, to taste
  • ¼ cup loosely packed fresh basil leaves
  • 2 tablespoons Peach White Balsamic
  • Optional: 1 teaspoon Franklin Raw Honey for additional sweetness

Directions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or place the flatbreads directly on a pizza stone.
  2. Arrange the flatbreads on the prepared baking sheet. Brush each one evenly with Basil Olive Oil, reserving a small amount for finishing.
  3. Top the flatbreads with the fresh mozzarella and sliced peaches, distributing the ingredients evenly.
  4. Season lightly with sea salt and freshly ground black pepper.
  5. Bake for 10–12 minutes, or until the mozzarella is soft and melted and the edges of the flatbread are crisp and golden.
  6. Remove the flatbreads from the oven and allow them to cool for 2–3 minutes.
  7. Top with fresh basil leaves, the remaining Basil Olive Oil and a generous drizzle of Peach White Balsamic.
  8. If desired, finish with a light drizzle of Franklin Raw Honey for a sweeter variation.
  9. Slice and serve warm.
