Ingredients
For the Potato Fritters
- 2 lbs russet potatoes, peeled and grated
- 1 small onion, finely grated
- 2 eggs
- ⅓ cup all-purpose flour
- ½ cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ¼ cup fresh parsley or cilantro, chopped

For the Dipping Sauce
- ½ cup mayonnaise or Greek yogurt
- 2 tbsp Dijon mustard
- 1 tbsp lemon juice

1 tbsp olive oil
- ½ tsp smoked paprika
- Salt & pepper to taste
Directions
- Place grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible. This is key for crispy fritters.
- In a large bowl, combine potatoes, onion, eggs, flour, cheese, garlic, salt, pepper, smoked paprika, and herbs. Mix until well combined.
- Heat a generous layer of extra virgin olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of mixture per fritter into the pan, gently flattening slightly.
- Cook 3–4 minutes per side until golden brown and crisp. Transfer to a paper towel–lined plate.
- In a small bowl, whisk together all dipping sauce ingredients until smooth.
- Serve fritters hot with dipping sauce on the side.
Recipe Note
