Fresh-Baked Focaccia with Garlic Olive Oil & Sea Salt
Share
There is something magical about pulling warm focaccia from the oven.
The golden top.
The soft, airy interior.
The scent of olive oil and sea salt filling the kitchen.
Focaccia is one of the simplest breads to make — yet when made with high-quality extra virgin olive oil, it becomes something truly special.
At The Little Shop of Olive Oils, we believe bread is simply a vehicle for great oil. And this focaccia proves it.
The secret?
Using a bold, fresh extra virgin olive oil both in the dough and generously brushed on top. For extra flavor, we love making this with Garlic Olive Oil, which infuses the bread with savory depth without overpowering it.
This bread is perfect for:
- Serving alongside soups
- Building sandwiches
- Dipping in balsamic
- Pairing with wine
- Or simply tearing and enjoying warm from the pan
Once you make this once, it will become a staple.

We love this focaccia because it’s everything great bread should be — golden and crisp on the outside, soft and airy on the inside, and rich with the flavor of fresh olive oil. It’s simple, comforting, and perfect for dipping, sharing, or tearing straight from the pan while it’s still warm.
Ingredients
-
4 cups bread flour
-
2 ¼ tsp active dry yeast (1 packet)
-
2 tsp sea salt
-
1 ¾ cups warm water (110°F)
-
¼ cup Garlic Olive Oil (plus more for topping)
-
Flaky sea salt for finishing
-
Optional: rosemary, grated parmesan, cherry tomatoes
Directions
Combine warm water and yeast in a bowl. Let stand 5–10 minutes until foamy.
Add flour, sea salt, and Garlic Olive Oil. Mix until a shaggy dough forms.
Cover and let rise in a warm place for 1–1½ hours, until doubled in size.
Generously coat a 9x13 pan with olive oil.
Transfer dough to the pan and gently stretch to fit. Let rest 20–30 minutes.
Use your fingertips to press dimples into the dough. Drizzle generously with olive oil and sprinkle with flaky sea salt and any desired toppings.
Bake at 425°F for 20–25 minutes, until golden brown.
Remove from oven and brush lightly with additional olive oil while warm. Serve slightly cooled or enjoy warm.
