  • 3 ½ cups all-purpose flour
  • 1 ½ teaspoons salt
  • 1 teaspoon sugar
  • 2 ¼ teaspoons active dry yeast
  • 1 ¼ cups warm water
  • 2 tablespoons Olive Oil
  • Additional olive oil, for brushing and finishing

Directions

  1. In a small bowl, dissolve the yeast and sugar in warm water. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil.
  3. Stir until a shaggy dough forms, then knead on a lightly floured surface for 8–10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise for about 1 hour, or until doubled in size.
  5. Punch down dough and divide into two equal pieces. Shape into long baguettes and place on a parchment-lined baking sheet.
  6. Cover loosely and let rise again for 30–40 minutes.
  7. Preheat oven to 425°F. Lightly brush baguettes with olive oil and score the tops with a sharp knife.
  8. Bake for 20–25 minutes until golden brown and crusty.
  9. Remove from oven and finish with a light drizzle of olive oil before slicing.
