Blueberry, Tomato, & Feta Salad


  • 4 cups mixed greens (like arugula, spinach, and romaine)
  • 1 cup fresh blueberries
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup dried cranberries
  • 1/4 cup sliced almonds (optional)
  • 3 tablespoons Premium Extra Virgin Olive Oil
  • 1 tablespoon Traditional Dark Balsamic Vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Franklin Raw Honey or maple syrup (optional, for sweetness)


  • In a large salad bowl, combine the mixed greens, fresh blueberries, cherry tomatoes, crumbled feta cheese, dried cranberries, and sliced almonds if using.
  • In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, and honey or maple syrup if you prefer a touch of sweetness. Season the dressing with salt and pepper to taste.
  • Drizzle the dressing over the salad and toss gently to combine, ensuring all the ingredients are lightly coated.
  • Serve the salad immediately, or chill for about 15 minutes in the refrigerator before serving to allow the flavors to meld.
