Spicy Chicken Kebobs


  • 1 pound chicken breast (cut into 1-inch cubes)
  • ½ cup Chipotle Extra Virgin Olive Oil (or Baklouti if you like it hot!)
  • 1 Tablespoon Pineapple Balsamic Vinegar
  • 1 tsp salt
  • 3/4 cup white wine or beer
  • Microgreens for garnish 
  • Green chili peppers for garnish (sliced thin)


  • In a bowl, combine all ingredients and mix to coat.
  • Marinate for at least 1 hour or overnight
  • When ready to skewer the meat, preheat gas grill to medium-high heat
  • Skewer meat and salt
  • Grill for 4-5 minutes on both sides, flipping once, until meat is cooked
  • Plate with garnish of microgreens and peppers
  • Serve immediately
