Quinoa with a Mediterranean Twist

Great for lunch all week!  Or snack or brunch or whatever :-)

Ingredients:

  • 1 Cup of Quinoa
  • 2 oz of Crumpled Feta Cheese
  • 10 oz of cherry tomatoes
  • 1 English cucumber
  • ½ Red Onion
  • 3 tablespoons of Wild Fernleaf Dill Extra Virgin Olive Oil
  • 1 tablespoon of fresh lemon
  • 1 pinch of sea salt to taste

Directions:

  1. Prepare 1 cup of Quinoa according to instructions and set aside to cool
  2. Slice tomatoes in half
  3. Dice cucumber and onion
  4. Place all ingredients (excluding cooled Quinoa) into a mixing bowl
  5. Once the Quinoa has cooled, scoop portions (the size you like) into a serving bowl
  6. Top of the Quinoa with the mixture
