Thirsty Thursday!

It’s Thirsty Thursday and we’re kicking off the holiday weekend with a childhood favorite all grown up – a Raspberry Gin Lime Rickey! The pool’s open, everything’s in bloom, and what better way to say Hello Summer! than by mixing the botanical and citrus notes of small batch artisan gin with the sweetness of raspberries and the tartness of a perfectly ripe lime?! As quick and easy as grabbing your Ray-Bans and slipping on your flips, this sweet-tart cocktail will have you heading into Summer in an instant!
Raspberry Gin Lime Rickey
2 oz. gin (we used @BrooklynGin )
1 oz. Raspberry Balsamic Vinegar
1/2 oz. simple syrup
Club soda
Lime and raspberries to garnish
In a shaker filled with ice, combine gin, raspberry balsamic and simple syrup.  Shake well until cold and pour into an ice-filled glass.  Add club soda and garnish with raspberries and a lime wedge.

Try this Sparkling Cara Cara Margaritas drink.

INGREDIENTS

  • 2 ounces tequila
  • 1 ounce Cointreau can substitute triple sec
  • 1 ounce lime juice freshly squeezed (about 2 limes)
  • 4 ounces Cara Cara Orange Balsamic Vinegar
  • 1/2 ounce local honey or more to taste
  • splash sparkling water
  • ice cubes

GARNISH & TO SERVE:

  • lime wedge
  • margarita salt
  • crushed ice
  • sliced lime
  • sliced orange

INSTRUCTIONS

  1. Rub a wedge of lime around the rim of the glasses. Turn the glasses upside down and press the rim into the margarita salt.  Set aside.

  2. In a shaker, combine the tequila, Cointreau, lime juice, balsamic and honey.  Add ice cubes, secure the top on the shaker and shake until very cold. 

  3. Fill the glasses with crushed ice and pour the margarita over the ice.  Add a splash of water and garnish with slices of lime and orange.  Serve.
