Saba Marinated Pork Tenderloin


  •  2 Pounds pork tenderloin
  • 1/2 Cup Saba Vinegar
  • 6 Large sliced white mushrooms
  • 1 Large sliced yellow onion
  • 1 Clove of minced garlic
  • 1 Teaspoon Himalayan salt
  • 2 Tablespoons of Extra Virgin Olive Oil


  1. Preheat the oven to 375 F
  2. Marinate the tenderloin ½ hour prior to placing in the oven with the Saba and Salt
  3. Place the marinated tenderloin in a baking dish misted with EVOO and bake for 30 minutes
  4. Add the garlic, onion and mushrooms to the dish and bake for another 20 minutes or until the tenderloin is 160 F at the core.
  5. Saba and pork juice may be used as is (sweet and savory) for your side dishes
