Champagne Pasta

Ingredients:

  • 10 oz Cherry Tomatoes (halved)
  • 4 oz Crumpled Feta Cheese
  • 2 Scallions (diced)
  • 1 English Cucumber (diced)
  • ½ cup Champagne Vinegar
  • ½ cup Nocellara Extra Virgin Olive Oil
  • 1 tablespoon Spicy Italian Blend
  • 1 Package of Favorite Pasta (Lanterne, Zucchetta, Penne)
  • 3  Olives (whole queen)

Directions:

  1. Cook pasta according to directions
  2. Once cooked, drain pasta and run chilly water over the strainer to stop the cooking process. Set aside to fully drain
  3. Combine remaining ingredients in a large bowl and mix until fully blended
  4. Combine the cool pasta with the mix and add olives for garnish
  5. Great for lunch!
