
Champagne Pasta
Ingredients:
- 10 oz Cherry Tomatoes (halved)
- 4 oz Crumpled Feta Cheese
- 2 Scallions (diced)
- 1 English Cucumber (diced)
- ½ cup
Champagne Vinegar
- ½ cup
Nocellara Extra Virgin Olive Oil
- 1 tablespoon
Spicy Italian Blend
- 1 Package of Favorite
Pasta (Lanterne, Zucchetta, Penne)
- 3
Olives (whole queen)
Directions:
- Cook pasta according to directions
- Once cooked, drain pasta and run chilly water over the strainer to stop the cooking process. Set aside to fully drain
- Combine remaining ingredients in a large bowl and mix until fully blended
- Combine the cool pasta with the mix and add olives for garnish
- Great for lunch!
